I'd definitely go with the "splitting up the users" option (that's actually what I have done a couple of times). I'm no friend of extents as this could lead to issues in the future (e.g. migrations) and if you have issue you would most likely be left alone with the unsupported EVA4100 anyway. Spanning the volumes from within the OS is something that I would never ever do either.
