You would get both performance and redundancy increase just with using several vmnics from the same vSwitch also with the default Port ID setting, and as Rubeck noted it is doubtful if you will gain anything by setting up the trunks (either in LACP or hp trunkt mode).
Also note that even if you get another physical switch to avoid the single point of failure then we must know that both static or dynamic trunks from ESXi must terminate into the same physical switch..
Unless - you have setup "stacking" of your switches or if they support the HP propriarity "Distributed Switch Trunking" method, which as far as I know is not available on the Procurve 2510.
